Burrino is a typical dairy product of Campania, for its preparation is used exclusively cow’s whey, but in this case we also make buffalo’s milk. Burrino consists of a first layer of spun dough and a heart of butter, the shape is pear and has the classic headboard created by the laces necessary to hang it during the ripening (10 days). This particular cheese was born from the need to preserve butter for a long time, keeping its flavour.
